Top Job Recruitment are working together with The Mercury Theatre, Colchester. After an extensive £10m refurbishment they are seeking a creative and inspired Head Chef to join the Mercury team as they prepare to re-open their completely refurbished and reinvigorated theatre and café bar.

As the Head Chef you would be responsible for planning, scheduling and delivering Catering for all events and activities across the  Mercury’s programme.

If you have great taste and are passionate for creating and delivering exciting food while being organised and demonstrating high culinary skills then this could be the role for you.

Job Role:

  • To plan menus for the Mercury’s Café Bar and other functions and events as booked
  • To ensure all food is planned, prepared, cooked and served to the highest standard
  • Work with the hires team to provide excellent catering and buffest for conferences and events
  • To be responsible for budgetary planning, costing, monitoring spending and control of agreed amounts on catering materials and labour
  • Encourage team to be aware of and seek to achieve commercial targets
  • Work with the Customer Experience Manager to maintain adequate record keeping, stock control, allergen information and pricing on the Theatres till systems, website and mobile app.
  • To maximise income and minimise expenditure wherever possible.
  • To coordinate the kitchen rota of Kitchen porters and Customer Experience trainees as required within budget
  • To monitor and co-ordinate the provision of training and staff development for kitchen team
  • To manage time effectively to meet deadlines as directed by the Project and Facilities Manager
  • Maintain a working knowledge of the Mercury Theatre’s programme, including hire activities
  • Attend and contribute to staff meetings and/or training sessions

Skills Required

  • Proven experience in a similar role with relevant qualification relating to the food and beverage industry
  • Strong communication skills and experience working within multiple creative teams
  • Ability to create and lead a team to fulfil detailed and complex schedules;
  • Excellent knowledge of current food health and safety regulations a
  • Experience of costing, budgeting and financial management.
  • Full UK driving license.
